A secretly healthy chocolate sauce perfect for drizzling on pancakes, cakes, ice cream or just eating by the spoon- only 3 ingredients!
This is probably the most addictive thing I have ever made...EVER. Alongside the brownies, cookie and cakes which just make you want to reach for another and another, this makes you want to have spoonful after spoonful resulting in finishing the whole bowl- worth it and NOT guilty. I like that feeling. I conjured this heavenly sauce for the sole purpose of drenching my pancakes in something other than maple syrup because when life gives you chocolate pancakes, you humbly accept with a jug of chocolate sauce, which if you ask me is the sole mate over maple syrup (not dissing maple syrup and pancakes by any means- but chocolate on chocolate is the way to go am I right?). It's so simple you can make it the microwave but if you want to do it properly you can make it over a bain- marie (bowl over simmering water), it will literally take you 5 minutes and it sits happily in the fridge if you have any leftovers, not that you will. The sauce will harden in the fridge but if you zap it in the microwave for about 20 seconds it should go back to its molten, pourable, luscious state. I made some tonight to pour over a mug brownie and I happily ate the remaining sauce with a spoon out of the bowl, if you have the will power not to do that then I applaud you- its very easily done.
I saw a recipe for a chocolate sauce for Pancake Day out of a Tesco magazine, but of course it was not the healthiest of ingredients due to it using butter and golden syrup. I wanted to healthify it so for one, it gives me an excuse to use my new favourite ingredient: coconut oil and so that I wouldn't feel guilty about demolishing all of it afterwards. Dark chocolate is a healthier option over milk and white since the darker the cocoa solid, the more antioxidants it has. Your looking at around 70% and above for proper dark chocolate, use the good- quality stuff too where it actually says the amount of cocoa (some dark chocolates don't label it which makes it questionable to how much it really has).
Now if your not a coconut fan, I think you could still love this. Although it depends how sensitive your coconut disliking taste buds are. For me, who is a coconut lover, the taste is not strong at all but thats maybe because I do actually love coconut, to be honest it just adds sweetness more than anything. Coconut lover or not, you have to make this. You won't regret it. Drizzle that stuff on anything and everything, including your face... there is no shame in having a chocolate covered chin.
HEALTHY CHOCOLATE SAUCE

2. If using a microwave- put all of the ingredients into a microwaveable safe bowl and microwave for about 2 minutes, making sure to do 30 second intervals and stir to avoid burning the chocolate.
